Instructions
  1. Heat half the bacon grease in a heavy skillet over moderate heat and saute the onion until tender but not brown, about 5 minutes.
  2. Mix together the potatoes, cabbage, salt, and pepper and transfer to the skillet.
  3. Stir to combine with the onion and press into a large, flat cake.
  4. Cook until browned on the bottom, about 15 minutes.
  5. Hold a large plate over the skillet and invert them together to transfer the cake to the plate.
  6. Return the skillet to the heat, add the remaining bacon fat, and slide the cake back into the skillet.
  7. Cook until the bottom is golden brown, about 10 minutes.
  8. Cut into wedges to serve.
  9. Alternately, the sauteed onions can be added to the potato and cabbage mixture and cooked as smaller, individual patties.
